Coconut Shrimp

Serves 3


12 large shrimp, raw

1 cup egg white, raw

1 cup coconut, dried, unsweetened

1 tbsp. cornstarch

1 cup panko breadcrumbs

1 cup flour, white


  1. Place the shrimp on paper towels.
  2. Mix panko and coconut together in a pan and set aside. Mix the flour and cornstarch in a separate pan and set aside.
  3. Place egg whites in a bowl.
  4. Dip one shrimp at a time into the flour mixture, then in to the egg whites, and finally into the coconut mixture.
  5. Place the coated shrimp into the Fry Basket. Repeat until all are coated.
  6. Place the Fry Basket into the Power Air Fryer XL. Press the M button.
  7. Scroll to the Fish icon. Press the Power Button. Adjust cooking time to 10 minutes at 350 degrees.
  8. After 5 minutes, turn shrimp if needed.
  9. Serve with your favorite dipping sauce.
