However, let’s look at that list again…do you notice a common element? Several of them have the word “fried” right in their name. The problem with these summertime favorites that are oh-so-tempting to most of us, is that they just aren’t healthy. Fried in oil until they are crispy and brown, they lure us in with that irresistible smell and a flavor we love. The only issue is, our hearts, and our waistlines, don’t really agree. All that oil is very unhealthy and clogs our arteries, making these tempting dishes just another item on the ever-growing list of things we are not supposed to indulge in, for fear of wreaking havoc on our health.

For a delicious and summery treat, try our recipe for Coconut Shrimp. All you will need are 12 large, raw shrimp; 1 tablespoon of cornstarch and 1 cup each of the following: raw egg whites; dried, unsweetened coconut; panko breadcrumbs; and white flour.
Start by placing the shrimp on paper towels. Mix the panko and coconut together in a pan or bowl and set aside. In another bowl, mix the flour and cornstarch together. Place the egg whites in a bowl. Dip one shrimp at a time into the flour mixture, then the egg whites, and then lastly, into the coconut mixture. Place the shrimp into the Power Air Fryer’s Fry Basket and repeat with remaining shrimp. Next, place the Fry Basket into the Power Air Fryer XL. Press the “M” button and scroll to the “fish” icon. Press the “power” button and adjust cooking time to 10 minutes at 350 degrees. After 5 minutes, turn the shrimp if needed.
