Make Healthy Versions of Boardwalk Foods at Home in your Power Air Fryer

If you’re lucky enough to live near the beach, then the term “boardwalk foods” probably conjures up images of any or all of the following: French fries, fried chicken, fried shrimp, fish tacos, among many others. (And if you don’t live near the beach, think “summer carnival fare” and we bet you come up with a similar list!)

However, let’s look at that list again…do you notice a common element? Several of them have the word “fried” right in their name. The problem with these summertime favorites that are oh-so-tempting to most of us, is that they just aren’t healthy. Fried in oil until they are crispy and brown, they lure us in with that irresistible smell and a flavor we love. The only issue is, our hearts, and our waistlines, don’t really agree. All that oil is very unhealthy and clogs our arteries, making these tempting dishes just another item on the ever-growing list of things we are not supposed to indulge in, for fear of wreaking havoc on our health.

Happily, there’s a convenient, counter-top appliance that allows us to have our fried foods and eat them, too, to paraphrase an old saying. The Power Air Fryer allows easy preparation of many favorite recipes, using less oil, or no oil at all, while still managing to produce great-tasting, crispy food.

How does an air fryer manage this magic? The trick is in the rapid air technology, which fries food with a cyclone of super-heated air, ensuring that it comes out crispy and delicious, without the added fat and calories of conventional deep fryers. What’s more, the Power Air Fryer does more than just fry foods; it is also capable of baking, sautéing, grilling and roasting, making it a very versatile appliance.

When cooking in the summer, most people want simplicity, and this oil less fryer delivers. It is small enough to fit on your countertop, and it creates feasts without the use of an oven, which can heat up the house way too quickly in the summer. Its seven preset programs allow for fool-proof use. Simply prep and load the food, select the correct setting, and allow the Power Air Fryer to do its work.

For a delicious and summery treat, try our recipe for Coconut Shrimp. All you will need are 12 large, raw shrimp; 1 tablespoon of cornstarch and 1 cup each of the following: raw egg whites; dried, unsweetened coconut; panko breadcrumbs; and white flour.

Start by placing the shrimp on paper towels. Mix the panko and coconut together in a pan or bowl and set aside. In another bowl, mix the flour and cornstarch together. Place the egg whites in a bowl. Dip one shrimp at a time into the flour mixture, then the egg whites, and then lastly, into the coconut mixture. Place the shrimp into the Power Air Fryer’s Fry Basket and repeat with remaining shrimp. Next, place the Fry Basket into the Power Air Fryer XL. Press the “M” button and scroll to the “fish” icon. Press the “power” button and adjust cooking time to 10 minutes at 350 degrees. After 5 minutes, turn the shrimp if needed.

What could be easier? In minutes, you’ve created an appetizer or light entrée with Caribbean flare that will have you humming island tunes and thinking summery thoughts.
